2015 Shirvington Wine Notes

2015 Cabernet Sauvignon

Wine Notes:

Cabernet Sauvignon from Block 4 of our Redwind vineyard was harvested at optimal ripeness. Crushed into 5 tonne opens the wine spent a week on skins being plunged, pumped over and racked and returned. It was basket pressed to oak where it underwent malolactic fermentation and maturation for 20 months prior to being blended and bottled.

100% French oak - 53% new and 47% 2 and 5 year old hogsheads.

Gorgeous aromas of juicy red and black currants, combined with traces of aniseed and cedar oak, charm the senses. These flavours flow into the mouth and merge with ripe raspberries to dance along the palate. Medium bodied with a generous savoury core, this fresh and vibrant wine is well crafted and incredibly attractive in its youth.

2015 The Redwind Cabernet Sauvignon

Wine Notes:

Grapes grown in the beautiful terra rosa soil of Block 4 in our Redwind vineyard were chosen and crushed into an open fermenter. The wine was plunged, pumped over, racked and returned and then basket pressed into predominantly new French oak. The best barrels were chosen and different amounts from each barrel were put together to make the finest blend.

100% French - 90% new and the remainder 2 year old hogsheads. This wine was a blend from the best 3 barrels.

Fragrant and sophisticated best describe the 2015 vintage of The Redwind Cabernet Sauvignon. Layers of violet leaf, cacao and coriander seed are met with a depth of fruit that is intense and effortless in its attempt to satisfy. Fresh upfront, it morphs into a serious and structural wine with long, measured and slightly chewy tannins.

2015 Shiraz

Wine Notes:

Shiraz grapes from Block 6 and Block 9 of our Redwind vineyard were harvested at their best possible ripeness and fermented separately in 5 tonne opens. The wines were plunged, pumped over and racked and returned before being basket pressed. Parcels were kept separate during 20 months of maturation until being blended and bottled.

100% French - 40% new and 60% 2, 3 and 5 year old hogsheads and puncheons.

Vivid purple hues in the glass resonate the brightness the wine shows on both nose and palate. Freshly picked blackberries mingle with plum and the slightest hint of blueberries, with undertones of cinnamon spice and a light dusting of oak. The palate is alive with juicy red and black berry fruit and crisp acidity. Soft and supple tannins are beautifully balanced by a creamy mouthfeel and mocha flavours.

2015 The Redwind Shiraz

Wine Notes:

Grapes from Block 9 of our Redwind vineyard were selected at peak maturity and crushed into an open fermenter. During fermentation the wine was plunged, pumped over and racked and returned before being basket pressed. The wine spent 20 months maturing in specially selected French oak. The best barrels were chosen and different amounts from each barrel were put together to make the finest blend.

100% French - 64% new and 36% 2 and 5 year old puncheons. This wine was a blend from the best 5 barrels.

A stunning wine with an aroma profile to match – the nose is a complex assortment of espresso coffee, Belgian dark chocolate and star anise. As these mature scents dissipate, the ripe, dark berry fruits and subtle floral notes come into play. The palate follows suit with rich, finely textured fruit and velvety tannins. Indulgent whilst maintaining its elegance is a hallmark of this wine.

Vintage Notes

Early to mid-season rainfall was good but the heavens dried up, resulting in a very dry spring and summer. The warmer than average temperatures in early spring, caused flowering to start a week earlier than normal, leading to lesser fruit set and lower yield. After the relatively mild conditions in late spring and early summer, rainfall of 15mm on 12 January, rather than slowing down ripening, caused the opposite. So, vintage was the earliest on record for us. The fruit showed excellent colour with good flavours and very good acid levels.
